I was getting tired of my cooks complaining about dull knives. I figure that if it lasts long enough and functions as well as it promises, then it would be worth it. I cook as well so I know how important a sharpened knife is in the kitchen so I fully understand the complaints of those who work for me.
I like how the Chef’s Choice Diamond Hone Commercial Knife Sharpener doesn’t take up too much counter space. It is larger than the “home version” and it is heavier but it fits well in the kitchen. Since it is quite expensive, I downloaded some material from the website and gave it to my cooks to read. It is really important that before using this product, you read the manual. Don’t assume you know how it works.
The tool sharpens our knives well. Of course, I personally prefer sharpening my knives manually but unless you’re quite adept and are willing to spend a little more time, in a busy kitchen, it might be preferable to use a knife sharpener. My cooks have no complaints and as long as they’re happy, my customers will be happy.

I highly recommend this product for use in commercial kitchens or even if you just cook a lot at home and don’t mind spending some extra cash. By the way, I’ve passed really dull knives in the Chef’s Choice Diamond Hone Commercial Knife Sharpener and they came out as good as new. Since knives are very expensive, I can vouch that this product is well worth its hefty price tag.
